Date Night Recipe: Pastured Lamb Chops with Skyr Yogurt Mint Sauce

Ingredients
- (6) Scallions
- (1/2 cup) Mint Leaves chopped
- (2 Tbsp) Fresh Dill minced
- (a pinch) Crushed Red Pepper Flakes
- (1 Tbsp) Olive Oil
- (1 Tbsp) Lemon Juice
- (5.3 oz.) Organic Plain Skyr Yogurt
- (1 Tsp) Salt
- (1/2 Tsp) Ground Black Pepper
- (1 pack) Lamb Rib Chops
- (1/4 cup) Olive Oil
- (1 Tsp ea.) Salt/ Pepper
- (1 Tsp) Garlic minced
Directions
Skyr Yogurt Mint Sauce
Combine all ingredients except the skyr in a food processor and blend. Add skyr and blend until combined. Refrigerate until ready to serve.
Lamb Chops
Put the lamb chops in a shallow bowl with the 1/4 cup olive oil and minced garlic.
Season with salt and pepper and toss to coat evenly. Let the lamb chops sit and marinate for 15 minutes.
After marinating, heat 1 Tbsp of olive oil in a saucepan on medium/high heat. Once the oil is shimmering, sear the chops for 2-3 minutes on each side for medium rare. Let them rest on a plate for 5-10 minutes before serving.
Serve with yummy skyr yogurt mint sauce and enjoy!
Note: The yogurt sauce can keep in the fridge for 5-7 days and pairs well with any red meat.
