Date Night Recipe: Pastured Lamb Chops with Skyr Yogurt Mint Sauce
Pasture raised lamb chops paired with a skyr yogurt mint sauce will change your life! For those of you that are skeptical, trust me. These two flavors pair so well together that the recipe is a go-to for a cozy date night at home. With Valentines Day around the corner, we thought we should share!


  • (6) Scallions
  • (1/2 cup) Mint Leaves chopped
  • (2 Tbsp) Fresh Dill minced
  • (a pinch) Crushed Red Pepper Flakes
  • (1 Tbsp) Olive Oil
  • (1 Tbsp) Lemon Juice
  • (5.3 oz.) Organic Plain Skyr Yogurt
  • (1 Tsp) Salt
  • (1/2 Tsp) Ground Black Pepper
  • (1 pack) Lamb Rib Chops
  • (1/4 cup) Olive Oil
  • (1 Tsp ea.) Salt/ Pepper
  • (1 Tsp) Garlic minced


Skyr Yogurt Mint Sauce

Combine all ingredients except the skyr in a food processor and blend. Add skyr and blend until combined. Refrigerate until ready to serve.

Lamb Chops

Put the lamb chops in a shallow bowl with the 1/4 cup olive oil and minced garlic.

Season with salt and pepper and toss to coat evenly. Let the lamb chops sit and marinate for 15 minutes.

After marinating, heat 1 Tbsp of olive oil in a saucepan on medium/high heat. Once the oil is shimmering, sear the chops for 2-3 minutes on each side for medium rare. Let them rest on a plate for 5-10 minutes before serving.

Serve with yummy skyr yogurt mint sauce and enjoy!

Note: The yogurt sauce can keep in the fridge for 5-7 days and pairs well with any red meat.
