The number one reason that we eat beef heart is how nutritious it is, especially when it comes from our pasture raised cows. It is full of protein and iron - two things that our family needs to stay healthy and able to run the farm!
Beef hearts can be intimidating if you aren’t familiar with them, but actually they are as easy to cook as a steak. Just slice into thick slices and sear hot and fast. Alternately, it’s great cubed up and thrown into a braise with some beef stew cubes or used raw for beef tartare.
Each Painterland Sisters beef heart weighs around two and three quarters pounds which is plenty for a dinner for your family and some left to throw in the freezer!
