Skirt steak is a tougher, but intensely flavorful flap of meat that is cut off of the inside of the beef ribs. Each one is a long thin muscle with a thick grain that is full of distinct pasture-raised beefy flavor. They are a relatively lean and flat steak which means they cook up nice and fast on the grill or in a pan. It's a fun challenge to see if you can get a plate of skirt steak on the table in the time that it takes your family to all share three things they are grateful for from the day.
Similar to a flank steak. skirt steaks are most tender when they get a marinade before being cooked hot and fast, not past medium rare. Make sure not to overcook this cut or it will be hard to chew! We like to grill ours before cutting it across the grain and making tacos or fajitas. It is also great on top of a salad or served in strips paired with a sauce on nights where we are looking for healthy meals.
