Whatcha Need

For the Crust:

9 Graham Crackers Sheet (whole, about one pack)
6 tbsp melted butter

For Everything Else

1 1/2 cups Painterland Sisters Vanilla skyr yogurt
2 cups cottage cheese
2 eggs
1 tsp vanilla extract
1/4 cup flour
1/2 cup pumpkin puree
1/2 cup sugar (or substitute with coconut sugar)
2 tsp pumpkin pie spices
1/4 tsp salt

Servings: 9-16 bars

Whatcha Do

Make the crust: In a food processor, crush the graham crackers into fine crumbs. Combine the crumbs with the melted butter, then press the mixture firmly into the bottom of a 9x9-inch pan using the back of a measuring cup. Bake at 350°F for 10 minutes, then set aside to cool slightly.
Prepare the filling: In a large mixing bowl, add all remaining ingredients. Use an immersion blender to blend until creamy and smooth — there should be no visible chunks of cottage cheese. (Tip: A regular blender works too, but an immersion blender makes cleanup easier.)
Bake and chill: Pour the batter over the prepared crust and bake at 350°F for 1 hour. Remove from the oven and let it cool slightly before transferring to the refrigerator. Chill for at least 6 hours or overnight to set.
Serve: Slice and serve with whipped cream and a sprinkle of cinnamon.
