Whatcha Need

1 3/4 cup flour
1/2 tsp baking soda
1 1/2 tsp baking powder
1/4 tsp salt
2/3 cup sugar
2 eggs
3/4 cup Painterland Sisters Yogurt (Plain or Meadow Berry)
1/4 cup vegetable oil
1 tsp vanilla
1/4 cup whole milk
1 1/2 cups mixed berries (fresh or frozen)
1 Tbsp all purpose flour (to be used to coat berries if frozen)

Servings: 12 muffins

Whatcha Do

Line a 12-cup muffin pan with paper or parchment liners.
In a large mixing bowl, whisk the flour, baking powder, baking soda, salt, and sugar until combined. Set aside.
In a separate bowl, beat the eggs. Add the Painterland Sisters Skyr Yogurt, oil, milk, and vanilla, and mix until smooth.
Add the wet mixture to the dry ingredients, and stir with a hand mixer on low speed until just combined.
If using frozen berries, coat them with 1 tablespoon of flour. Carefully fold the berries into the batter.
Divide the batter evenly among the muffin cups, filling each almost to the rim.
Bake at 425°F for 5 minutes. Lower the oven temperature to 350°F (175°C) and bake for another 15–18 minutes, until the muffins are golden and a toothpick inserted in the center comes out clean.
Let the muffins cool in the pan for 5 minutes, then move them to a wire rack to cool fully. Serve and enjoy!
