Bars:
Granola:
1 1/2 cups rolled oats
1/4 cup brown sugar
1 tbsp pumpkin pie spice-
1 tsp cinnamon
2 tbsp olive oil
1 tbsp maple syrup
1/4 cup pumpkin puree
1/2 cup slivered almonds (or other nuts)
2 tbsp flax seeds
Pumpkin Yogurt:
3 containers Painterland Sisters Vanilla Yogurt (about 16 oz)
1 cup pumpkin puree
1 tbsp pumpkin pie spice
2 tbsp maple syrup

To make the Granola:Preheat the oven to 400 degrees. In a large bowl, mix the rolled oats, brown sugar, pumpkin pie spice, and cinnamon. Mix until the spices coat the oats.
Add the olive oil, maple syrup, pumpkin puree, slivered almonds, and flax seeds. Mix well with a rubber spatula until the oats are thoroughly moistened by the wet ingredients.
Spread the granola in a single layer on a pan lined with parchment paper. Bake for 25-35 minutes until fragrant and toasted, flipping and stirring occasionally with a spatula. Remove and allow to cool completely.
To make the pumpkin yogurt: Mix the yogurt, pumpkin, pumpkin spice, and maple syrup in a bowl until well combined.
Right before serving, alternate layers of granola and pumpkin yogurt in a jar or class container and serve! Store separately to keep the granola crunchy, storing both in sealed containers in the refrigerator for up to a week.
