Whatcha Need

Bowl

1 cup dry pearled farro (about 3 cups cooked)
4 tablespoons ground flax seeds
1 can chickpeas (15 oz), drained
2 tsp olive oil, divided
Salt and Paprika to taste
1 cup sliced cucumbers
1 cup sliced peppers (about 1 large pepper)
¼ cup Kalamata olives

Sauce

1 cup plain Painterland Sisters Yogurt
2 tablespoons finely chopped fresh mint
2 tablespoons grated cucumber
1 tablespoon fresh lemon juice
1/2 finely grated garlic clove
¼ teaspoon salt
1 tbsp olive oil

Servings: 3-4 bowls

Whatcha Do

Prepare the Farro:
Combine 1 cup dry pearled farro with 2½ cups water and a pinch of salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer until tender and fully cooked. Remove from heat and immediately stir in the ground flax seeds until well combined.
Prepare the Chickpeas:
Drain and rinse the chickpeas, then pat them dry. Warm 1 teaspoon olive oil in a skillet over medium heat. Add the chickpeas, a pinch of salt, and a sprinkle of smoked paprika.
Prepare the Peppers:
Slice the pepper into small pieces and toss with the remaining 1 teaspoon olive oil. Roast at 425°F until tender and beginning to brown.
Mix the Sauce:
In a bowl, combine the yogurt, chopped mint, grated cucumber, lemon juice, minced garlic, salt, and olive oil. Stir until smooth and thoroughly mixed.
Assemble the Bowl:
Spoon the farro and flax seed mixture into the bottom of a bowl. Top with the warmed chickpeas, roasted peppers, sliced cucumbers, olives, and a dollop of yogurt sauce. Garnish with sliced lemon and fresh mint, then serve and enjoy.
Tip: You can add even more toppings for even more fiber! Try nuts, roasted sweet potato, or lentils as desired.
