Chocolate Cupcakes with Skyr Frosting

Ingredients for the cupcakes:
1 1/4 cups Flour
1/2 cup Cocoa Powder
1 + 1/2 tsp Baking Powder
1/2 tsp Salt
1/2 cup Unsalted butter (softened)
1 cup Granulated Sugar
2 Eggs
2 tsp Vanilla Extract
3/4 cup plain Painterland Sisters skyr
1/4 cup Water
Ingredients for the frosting:
2 cups plain Painterland Skyr yogurt
2 teaspoons pure vanilla extract
1 cup powdered sugar

How to make the cupcakes:
Preheat oven to 350 degrees F + line muffin pan with cupcake liners or spray with oil
In a mixing bowl, whisk together flour, cocoa, baking powder + salt
In a separate bowl, mix together the butter and sugar until creamy and fluffy (~2-3 min)
Add eggs one at a time and continue to mix
Take the dry ingredients and slowly incorporate into the bowl
Add in the yogurt, vanilla and water until combined (the batter should be thick!)
Fill the cupcake liners until they are roughly 2/3 full with batter
Bake for 18-20 min or until a toothpick comes out clean
*Allow to cool before frosting
How to make the frosting:
In a bowl, add skyr, vanilla and powdered sugar
Using an electric hand mixer set on medium speed, beat together until the frosting thickens (~2 minutes)
Cover and place in the fridge for 30-60 minutes while you bake and cool your cake or cupcakes.
To frost your cupcakes, wait until they are completely cool. Then fill a quart-size zipper bag with the frosting, snip the corner and use it to pipe frosting onto the cupcakes. Or simply use a spatula or a spoon to spread the frosting on the cupcakes.
