Chocolate Cupcakes with Skyr Frosting

Is there anything better than a little chocolate on Valentine's Day?! I don't think so! These delicious fluffy cupcakes come together quickly and taste ahhhhmazing!

P.S. If you don't have the time/ingredients to make the cupcakes from scratch, feel free to substitute skyr for oil in boxed cake recipes! (1:1 ratio)

  • Ingredients for the cupcakes:

    • 1 1/4 cups Flour

    • 1/2 cup Cocoa Powder

    • 1 + 1/2 tsp Baking Powder

    • 1/2 tsp Salt

    • 1/2 cup Unsalted butter (softened)

    • 1 cup Granulated Sugar

    • 2 Eggs

    • 2 tsp Vanilla Extract

    • 3/4 cup plain Painterland Sisters skyr

    • 1/4 cup Water

    Ingredients for the frosting:

    • 2 cups plain Painterland Skyr yogurt

    • 2 teaspoons pure vanilla extract

    • 1 cup powdered sugar

  • How to make the cupcakes:

    • Preheat oven to 350 degrees F + line muffin pan with cupcake liners or spray with oil

    • In a mixing bowl, whisk together flour, cocoa, baking powder + salt

    • In a separate bowl, mix together the butter and sugar until creamy and fluffy (~2-3 min)

    • Add eggs one at a time and continue to mix

    • Take the dry ingredients and slowly incorporate into the bowl

    • Add in the yogurt, vanilla and water until combined (the batter should be thick!)

    • Fill the cupcake liners until they are roughly 2/3 full with batter

    • Bake for 18-20 min or until a toothpick comes out clean

      *Allow to cool before frosting

    How to make the frosting:

    • In a bowl, add skyr, vanilla and powdered sugar

    • Using an electric hand mixer set on medium speed, beat together until the frosting thickens (~2 minutes)

    • Cover and place in the fridge for 30-60 minutes while you bake and cool your cake or cupcakes.

    • To frost your cupcakes, wait until they are completely cool. Then fill a quart-size zipper bag with the frosting, snip the corner and use it to pipe frosting onto the cupcakes. Or simply use a spatula or a spoon to spread the frosting on the cupcakes.
